Can you install HUD into a non HUD car?
I did this in a 98 GP, but I've read that the Bonnie's HUD is a tad more integrated.
So has anyone done it and if so how difficult is/was it?

Yes it can be done, I swapped HUD into my '02 SE. My car was a complete base model, no dual zone climate control and the SE gauges without DIC. I used a 2005 GXP dash harness to do the swap and also added in the dual zone climate control as well as the DIC gauges. If you don't have the Bose or Monsoon stereo (SE or SLE) you will have to either just add the HUD wires in to the stock dash harness or use a HUD harness and move two speaker output wires in the dash harness.
Keep in mind that I also swapped to a 2004 SLE complete body harness at the same time, I know there are some differences in 2000 - 2002 from 2003 - 2005 so you will likely have to get a HUD dash harness that matches your year range or just add the wires in, in which case I don't believe it would matter.

what ryan forgot to tell you is that the cheapest way to do this is to have some donor cars like he did, he had the gxp and the sle to take the parts off of.

That is only the cheapest way if you can find a car with HUD for cheap then have the time / space / knowledge to part the rest of it out then scrap the shell. This was merely a question of is it possible not how much would it cost 
Depending on local parts availability or shipping parts, I would say this could run $500 or more just to go from non HUD SSEi and adding it which is the easiest. Swapping a bare bones base SE to HUD would add more cost to that from the additional parts needed - dual zone climate control head unit, dual zone HVAC box, and DIC gauges.

I'm looking to get into a Bonnie soon, and I'm just trying to narrow down which models I should be focusing on.
There's certain options that I'd like to make sure I get, like HUD.
Ryan, are you saying that HUD wasn't standard on the SSEI?
side note, unrelated to HUD, any idea what was the first year that LATCH system (Lower Anchors and Tethers for Children)
showed up?

HUD was optional for 2003 SSEi and also 2004 / 2005 GXP.
Not sure when LATCH came around, I think 2002 though but not 100% sure on that. Seats changed in 2003, cup holder layout changed in 2002. Everyone hates the 00-01 cup holders and swap to the 02+ most prefer the seats in 03+. I owned a 2003 SSEi for 7 years and 150,000 miles and had a love hate relationship at first but the longer I had it the more I loved it.

I have a 2001 se and a 2002 seei, the 02 has the latch system and the 01 doesn't.
Jut get a 2002 or newer and save yourself a lot of headache.

The windshield on a non-HUD car is not the same as the HUD one. There is a special reflective piece put in between the laminated glass to give a clear image. With non HUD glass, you may get 'ghosting' of the image but many say that it is not noticeable. Since you do not have a car yet, try to find one with the factory HUD and save yourself a lot of headaches. All 2002 SSEi have them and many 2003 SSEi also have them. If you look at '04 and '05 the HUD was optional for the GXP and I am not sure it was offered in the SLE but if it was, very few had them installed

Have to agree with Bob. Just try and find an SSEi. You'll get the blower, the HUD, a nicer stereo, memory seats, etc.
