Short update: I borrowed a fuel pressure gauge from the mechanic at work and drove around for a few days with it clipped under my windshield wiper. If you do go after the fuel pump and you didn't see my thread, be careful with the bolts holding the tank straps. The bolts should be fine but GM used those thin little metal tabs with threads on one side instead of proper nuts. They're almost guaranteed to break due to rust buildup on the threads ...
