I`ve been told that the proper plug for a 2000 SSEi is an AC Delco 41-101 and an AC Delco 41-121. Which one is the proper one?

Stock AC Delco 41-101 should be fine. NGK are not bad. Avoid Bosch. I'd stick with stock wires, most aftermarkets I've had have been poor quality.

In my experience, standard style plugs are less prone to fouling. It also seems to me that a lot of extra ground strap like that would tend to shield the spark from the fuel and create a bit of a disturbance in the propagation of the flame front.

Use Iridium for longevity. Avoid platinum, as it doesn't work in waste-spark style ignition systems.
