Oil consumption gremlin

My 2000 SLE was using a litre of oil every 1000km(625miles). It only has 90000km(56000miles) on the car. I decided to change the UIM just as a precaution. When I removed the UIM there was a lot of oil in between the UIM and the LIM and it seemed to be coming through the PCV. I decided to change the LIM gaskets, valve cover gaskets and replace the UIM with the Dorman. After the repairs we took a trip to British Columbia, about 1300km(800miles) and it didn't burn a drop. It was running better than ever. One day we went skiing. After driving to the ski hill with a very steep grade at the end the car reeked of burning oil and the oil pressure gauge went crazy. We went skiing and got back to the car to have it run great. We put on another 7hrs of driving with no problem. So I decided to climb a steep hill and again it stunk like burning oil and the pressure gauge went crazy. I then drove another 1000km home with no issues. Does anyone know what is going on? It's a long winded story but the history might help.

Might still be burning off the remnant oil in the exhaust, etc?

Did you properly reinstall the o-rings on the PCV?

I don't think it's burning left over oil cause I've put on 3000km. It runs great all the time but after climbing a steep grade it burns oil heavily for a minute. Then it clears up and runs great again. The new PCV and Orings were very tight in the new UIM but I am pretty sure I got them installed properly.

Maybe a leaky new valve cover gasket on the rear bank?

How steep exactly? could leak out the oil pan and hit the manifolds or downpipe.

Not sure what angle but if it leaked out a bad oil pan gasket why would the oil pressure gauge start jumping around?

Did you replace the PCV valve when you did the intakes? IF not, you may want to try that.

I did replace the PCV but I guess it could be defective. Maybe I will just put in another 1.
