I'm throwing two codes for the evap, switch and sensor. (Can't think of the codes right now.)
Do I have to find '96 parts or is it possible to swap to the '97-'99 set-up?
Evap issues.

Re: Evap issues.
I looked up the solenoid on Autozone and it's the same part number for 1996 thru 1999. Look up the parts at Autozone and/or Advance Auto Parts (or your favorite online parts store), and if they're the same part - have at it.

Re: Evap issues.
'96 Was different than '97-'99. I have two separate pieces, the switch, and the sensor mounted by my MAP sensors, then the canister. '97-'99 have one unit located by the canister. If I can switch to the other style without issue I would rather do that because it's easier to find.
Or can it be deleted entirely?

Can't help you. My guess would be that a different part will throw codes. It is a good question though. Same engine, perhaps the same tolerances.

Re: Evap issues.
I really want to get this resolved. I think it's causing me KR (about 2*) and would like to get it done by Saturday so I can get a full, solid tune done.
