Has anyone tried to install a true duel exhaust system on a Bonneville SSEi?
I mean one that runs from the engine all the back to the back bumper.

From what I have heard, there is no room for another exhaust pipe and cat.

What would be the point? The exhaust comes from the rear manifold to one exit. Plus, there's a "tunnel" there for the exhaust to run through. Duals would have to come out a Y pipe from the rear manifold, and would have to go back to the center of the car to avoid the rear suspension. It would also probably hit over speed bumps and stuff.
If you have the money to do it, fine. But it's not worth it, and unless you're running 500 HP, it wouldn't make a HP difference. You'd probably actually lose power, and it wouldn't sound any better. You'd be better off going to a full 2.5" exhaust in the stock configuration with nice mufflers. But, you still wouldn't gain much power, and your car would probably drone, and be really loud.
