Is there anything difficult about installing the Aeroforce Interceptor and hooking it up? If I got a second one, would I need to get a splitter or anything to make it work?

Depending on which model of Interceptor you get. Older ones may need a 12v power source. Newer ones feed power directly from the OBDII port.

Don't really see the need for two unless you are highly modified.

Thanks nos. Always a big help! I ordered it a few minutes ago right off of the INTENSE website so I assume it's new. So it plugs right into the OBDII port underneath my knees? If I had 2, I'm guessing I'd need a splitter?

You don't need 2. Put that money towards other mods, lol.

Yes. You just plug it in into the port and it'll run when you start the car and turn off a couple of seconds after you turn off the engine. I can't say for sure on the splitter. I think you can only get that if you buy them paired together straight from Aeroforce.
