Hello, anyone know where I can find the complete listing of signals that the ECU processes that can affect throttle positioning (vehicle speed sensor signal, wheel speed sensor signal, etc...)?

You could try the factory service manual. Probably reasonably priced on Ebay.
Might have to read through the trouble code flow charts and sensor descriptions to find out all the inputs.
