Does the sensor in the middle of my dash board have to do with the a/c temperature or lights? (2005) pontiac bonneville 3.8)

Yes sir, if you have automatic climate control in your SE, the sensor controls the air temp depending on the angle of the sun. It also tells the car when to turn the lights on.

I forgot to mention it has no automatic climate control! Sorry. My a/c was working fine then one day it just seem to be a little warmer than usual. I had a new a/c compressor in my storage so I thought I might as well use it. I changed the orfice tube, checked for leaks. Can't find the problem. Low side is about 43 and I think the high side was compatible at 210 or in that area. Friend said it all looked ok. Don't know what to do! help!

I can't speak to the A/C problem other than does the condenser look plugged with bugs or otherwise occluded? In response to your other question, in a non-dual climate control vehicle such as yours, that is only an ambient light sensor. It will have no effect on your problem.

There is not rubbish such as leaves or obstructions on my condenser and no leaks. I'm wondering if I should just vac and refill coolant and oil.

check your cabin air filter to make sure it is not clogged up with leaves and debris and change it if you have never done so.

Good thought, but probably doesn't have a filter. I don't recall which year GM stopped installing these, but well before the 2005 model year. Also, I'm not sure if the SE ever got them unless the owner added it after the fact. My GXP didn't come with one. That was one of the first GM cheap-outs I corrected!
