Year and Trim: 2003 Bonneville SE

Hey all, I have a few questions regarding replacing the brake line system. is it best to simply just attempt to mock the old lines? and are there any small rubber hoses, gaskets, etc. that I should look into replacing while I have the whole system apart as well?
